Oh my gosh these bliss balls are so beautiful. The recipe just came to me one beautiful autumn day on Kawau at our Stillwaters Yoga Retreat Centre.Give it ago – you wont regret it.

1 bag ceres organic apricots
1 bag ceres organic raisins
zest of 1 lemon
2 tsps. lemon juice
3-6 tbsp. ceres coconut cashew butter (more makes them very rich and creamy)
Soak the dried fruit for 2 hours. Drain water and puree the fruit in a food processor with a strong 900 watt engine until it is like a stiff paste. Add lemon zest lemon juice and coconut cashew butter (only and a little water if necessary). Just run the motor till it is all blended together – short blast a few times.

Put the mix into a bowl and hand roll into balls and roll them in organic dried  coconut. Store in a air tight jar.
Enjoy them with a good book and a cuppa tea on a winters afternoon!
